Ingredients

For prawns:

  • 12 fresh medium uncooked prawns
  • 2 eggs
  • pinch each of salt and ground white pepper
  • ½ cup plain flour
  • vegetable oil, as needed for frying

For cho ganjang - vinegar soy dipping sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons Korean rice wine, see notes
  • 2 tablespoons apple cider vinegar , or rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 spring onion (scallion), finely sliced
  • pinch of salt
  • 1 tablespoon coarsely chopped pine nuts , see notes
  • a pinch of freshly ground black pepper

Recipe Instructions

For preparation:

  • Wash the prawns. Remove the head and peel off the shell, leaving the tail section.
  • De-vein the prawns with a skewer. With a knife, make several shallow cuts on the prawns belly to prevent from bending while cooking. Or you may butterfly the shrimps.
  • In a bowl, beat the eggs well.

To cook prawns:

  • Sprinkle the salt and ground white pepper to shrimp. Dredge the shrimp in flour except tails.
  • Dip the shrimps into beaten eggs, holding tails. Pan-fry them in hot oil until golden brown.
  • Serve with dipping sauce

For cho ganjang - vinegar soy dipping sauce:

  • In another small bowl, Mix together the soy sauce, rice wine, vinegar, sesame oil, lemon juice, spring onion, and salt.
  • Add the pine nuts and ground black pepper just before serving. Store leftover sauce in an airtight container and refrigerate for up to a week.

Cooks Notes & Variations

Vermouth can be substituted for the Korean rice wine
Toasted sesame seeds can be substituted for the pine nuts
