Khao Kha Mu – Pork Trotter stewed in Soy Sauce




Khao kha mu (ข้าวขาหมู) is steamed rice served with sliced pork trotter which has been simmered in soy sauce and spices. It is always served with a sweet spicy dipping sauce on the side. Often a clear broth is provided on the side as well, as are fresh bird’s eye chillies and cloves of raw garlic. Boiled egg is optional.

Ingredients

  • 1 - 1½ kg pig's trotter/s
  • 1 bunch spring onions <em>, tied into a knot</em>
  • 2-3 slices fresh ginger
  • 3-4 cloves garlic
  • 3-4 dried chillies <em>, optional</em>
  • 1 star anise
  • 10-12 cups water
  • 1 cup white wine, for cooking

For seasoning

  • 1 cup Kikkoman soy sauce
  • 1 teaspoon sugar
  • ½ teaspoon salt, to taste

Recipe Instructions

  • Clean the trotter(s) and blanch in a pot of boiling water for 5 minutes. Drain.
  • In a saucepan add 1 teaspoon of cooking oil, fry the ginger and garlic until fragrant, and add the star anise, chilli and spring onion.
  • Brown the trotter, and add 10-12 cups of water, cooking wine, sugar and soy sauce. Bring to boil, and turn the heat to medium-low, cook for 2-2½ hours.
  • Season with salt, and simmer for another ½ an hour or until the trotter is completely soft.
