Ingredients

Poppy-seed Filling for Hamantash

  • 250 g fresh ground poppy seed
  • 240 g sugar
  • 240 g milk
  • 50 g butter biscuit crumbs
  • 50 g butter
  • 1 yolk
  • 1 level teaspoon lemon peel, (from ½ lemon) – optional

Date Orange Filling for Hamantash

  • cups packed pitted dates
  • 1 teaspoon packed finely grated fresh orange zest
  • cup fresh squeezed orange juice
  • ¾ teaspoon cinnamon
  • ¼ teaspoon almond extract
  • 1 - 2 tablespoons water, if necessary

Instructions

Procedure for Poppy-seed Filling

  • Bring milk and sugar to a boil. Add the poppy seed and then remove from the stove.
  • Stir and then add the cookie crumbs, butter and lemon peel.
  • Follow directions for making and filling Hamantash

Procedure for Date Orange Filling

  • In a food processor blend together all filling ingredients except water until an almost smooth, jam-like consistency. If date mixture is very dry blend in water, 1 tablespoon at a time. Filling may be made 2 days ahead and chilled, covered.
  • Follow directions for making and filling Hamantash
