Meatloaf Recipes

Meatloaf is a versatile dish. The ground meat may be mixed with a binder such as eggs and breadcrumbs, small pieces of bread soaked in milk (or red wine or another liquid), or wheat germ, finely ground almonds, or oatmeal, to make it more dough-like. Salt, spices and herbs (such as parsley), as well as chopped vegetables (such as onions, green peppers and celery), may also be added.

Scrapple

For those who are not familiar with scrapple, which is also known by the Pennsylvania Dutch name “pon haus“, it is traditionally a mush of pork scraps and trimmings combined with polenta (cornmeal), wheat flour and spices. (The spices may include, but are not limited to: sage, thyme, savory and black pepper.) The mush is then formed into a semi-solid loaf, sliced and pan-fried.

Have you ever made oatmeal and as it cools it sets firm and you can slice it with a knife. Well this is the concept used here but you simmer it for several hours with meat , onions and spices. Then you cool it, slice it into patties, and fry it . It is great by itself or with eggs for breakfast or with a salad for lunch or dinner.

Faschierter Braten – Austrian Meatloaf

Faschierter Braten is a traditional Austrian dish, often served with mashed potatoes, caramelised onion rings and sometimes served alongside a salad. It is a tasteful, satiable and inexpensive meal of beef mince and pork mince. Depending on the kind of preparation, the Braten also has other names: Netzbraten when the ground meat mass is wrapped and roasted in a pork net; Falscher Hase when it is formed like the shape of a hare’s back or Stephaniebraten when the roast is additionally filled with a hard boiled egg, pickles, and sausages

Meatloaf is a dish of ground meat formed into a loaf shape and baked or smoked. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand on a flat baking pan. Meatloaf is usually made from ground beef, although lamb, pork, veal, venison, and poultry or a combination are also used.
