Tuk Meric is one of the most simple sauces to make and can be found in southern Cambodia – it is nothing more than fresh lime juice blended with ground black pepper. The quality of your pepper is going to make a huge difference to the end result and if you can get your hands on some Kampot pepper so much the better.

Ingredients

  • 2 teaspoons freshly ground black pepper, or Kampot pepper. Don’t skimp on the pepper
  • ½ teaspoons salt
  • ½ teaspoons sugar
  • 2 teaspoons freshly squeezed lime juice

Instructions

  • Mix the four ingredients in a small shallow dish and use as desired

  • Kampot pepper tastes like other black pepper, except that it is stronger and more fragrant.
