These easy lemon and coconut flavoured friands are a quick, simple dessert or tea time treat. Serve them plain with flaked almonds, or dress them up with a light coating of vanilla flavoured icing and toasted coconut.
- Preheat your oven to 200°C and grease a 12 hole muffin or friand tin.
- In a medium bowl, beat your egg whites using a fork. Stir in the butter, almond meal, sifted icing sugar and flour, lemon rind, juice and desiccated coconut and mix until just combined.
- Pour about ¼ cup of the friand mixture into each pan hole and sprinkle with flaked almonds.
- Bake for about 20 minutes. Stand in the tin for 5 minutes before turning out on to a wire rack to cool.
