This recipe is for a typical pork egg fu yung that you would find on the menu of many Chinese restaurants. It contains pieces of pork, bean sprouts and spring onions; served with brown gravy.

Ingredients

  • 225 g barbecued pork or leftover roast pork, cut into small pieces
  • 225 g fresh bean sprouts, rinsed and drained
  • 4 spring onions (scallions), including the green parts, cut into small pieces
  • 3 tablespoons oil
  • 4 teaspoons soy sauce
  • 8 eggs, beaten with a teaspoon of salt and a pinch of pepper

For the gravy

  • 2 cups chicken stock
  • tablespoons soy sauce
  • tablespoon oyster sauce
  • ½ teaspoon sesame seed oil
  • 2 tablespoon cornflour (cornstarch), mixed with 2 tablespoons cold water

Instructions

  • For each omelette, add one tablespoon of oil and quickly stir-fry ¼ of the pork and one spring onion.
  • Add one teaspoon of soy sauce and ¼ of the bean sprouts and quickly pour in 2 of the beaten eggs.
  • Do not stir the mixture but cook over moderate heat until a patty forms. Then carefully flip it over and cook the other side.
  • Repeat this process for all four omelettes and serve warm with the gravy and steamed rice.

For the gravy

  • Heat the first four ingredients to a boil, add the water and cornflour while stirring and simmer until it thickens.

Notes

It is best if you can use a small skillet (15cm in diameter or less) to make each of the four omelettes.
