  • 100 g sliced salami, cut into strips
  • ¼ cup pine nuts
  • 150 g baby rocket leaves (arugula)
  • ½ cup shaved sharp Parmesan
  • ½ cup semi-dried tomatoes
  • ½ cup pitted kalamata olives
  • ¼ p cup balsamic dressing
  • crusty bread to serve


  • Pan fry salami and pine nuts, drain. Toss with rocket, Parmesan, tomatoes, olives, and dressing.
  • Serve salad with crusty bread.
