Avocado and Tomato Salad with Lime Vinaigrette

This is an easy to make salad using avocado, tomatoes, red onion, and arugula leaves. With a little extra flavour from toasted cumin seeds, lime juice and torn fresh coriander leaves you have a delicious side dish for barbecued meats or fish.

Ingredients

  • 4 large ripe tomatoes, cut into 2 cm chunks (or 20 cherry tomatoes, halved)
  • 2 large ripe avocados, halved, pitted, peeled, and cut into 2 cm chunks
  • 1 large red onion, thinly sliced
  • 2 cups baby rocket leaves (arugula)
  • 1 teaspoon ground cumin
  • ¼ cup chopped fresh coriander (cilantro)

For the vinaigrette:

Instructions

  • Gently mix the tomatoes, avocados, onions, arugula, and half of the vinaigrette in a large bowl. Adjust seasoning and add more vinaigrette, if needed. Sprinkle the cumin and coriander leaves over the top and serve immediately.

For the vinaigrette:

  • Whisk together the lime juice, vinegar, honey, cumin, and coriander in a medium bowl. Gradually whisk in the oils until emulsified. Season with salt and pepper, to taste. Do not use a blender to make this vinaigrette.
