This healthy salad has both crunch and sweetness that can be eaten on its own or as a side dish.
- Blanch broccoli florets in boiling water for two to three minutes, if desired. Rinse in cold water and strain till dry. Transfer to a medium bowl.
- To the broccoli, add spring onions, dried cranberries, walnuts, almonds, apple and sunflower seeds.
- In a small bowl, combine yoghurt, honey and lemon juice. Fold dressing into salad and season to taste with salt and pepper.
