Simple Leafy Salad with Balsamic Vinaigrette

This is a fast and simple lettuce, tomato, and cucumber salad that you can throw together for a side dish to any meal.

Ingredients

  • 240 g 4-Leaf Salad Mix
  • 2 medium tomatoes
  • 2 Lebanese cucumbers

For vinaigrette

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey

Instructions

  • Thinly slice the tomato into half-moons. Thinly slice the cucumber. In a medium bowl, combine the balsamic vinegar, honey and olive oil. Season to taste with salt and pepper.
    Add the lettuce mix, tomato and cucumber to the bowl and toss to coat.
    Serving Suggestion : Toss the salad just before serving to keep the leaves crisp.
