Beef and Vegetable Soup with Barley

Ingredients

  • 650 g beef stewing steak, diced
  • salt and freshly ground black pepper, for seasoning
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic
  • 4 cups beef stock
  • 1 cup pearl barley
  • 2 dried bay leaves
  • 2 swedes, peeled and diced
  • 2 tablespoons finely chopped parsley

Instructions

  • Season beef with salt and black pepper. Heat oil in large saucepan over medium high heat and when hot cook beef in batches until well browned. Remove meat using a slotted spoon and set aside.
  • Add onion, carrot, celery and garlic. Cook, stirring frequently, for about 5 minutes until golden.
  • Add stock and 2 cups of water, stirring well to scrape juices from the base of the pan.
  • Return meat to pan with pearl barley and bay leaves and bring to the boil. Reduce heat and simmer, partly covered for 1 hour.
  • Add the swede and cook, uncovered for a further 30 minutes until tender, adding extra water if too thick.
