Treat yourself to this mildly spicy side dish of edamame salad or serve them up as a tasty snack.
Edamame Salad with Miso Dressing
- Mix white miso paste, rice vinegar, mirin, sugar, and mustard with warm water. Stir to combine until everything is completely melted and blended. Set aside for an hour so the flavours can meld.
- Put the edamame into a medium-sized saucepan and cover by 2 cm (¾") with water. Bring to a boil and cook for 5 - 6 minutes, until tender. Drain and rinse with cold running water. Drain again to remove any excess water.
- Place the cooked edamame, rocket leaves, and dressing into a suitable sized serving bowl and toss well to combine.
- Serve as a snack or side dish.
